In 1630 Dutch engineer, Cornelius Vermuyden, began to drain the Great Level of the Fens. The work completely altered the landscape and made the Fens one of England's most productive areas. A network of channels was dug, with windmills and sluices to regulate water level. Let's celebrate Vermuyden's achievement with a suitable cake
