St Patrick, the patron saint of Ireland, used the shamrock to illustrate the doctrine of the Trinity, Father, Son and Holy Ghost. To mark his saint's day we could choose from cakes made with potato or stout, but this one made with fruit soaked in whiskey seemed the best way to celebrate.
