Lemon, with it sharpness of taste, is wonderful in cakes as it offsets the sweetness of the sponge. Many cakes are variations of what Mrs. Beeton refers to as a 'basic recipe', with different flavours added to make such cakes as Seed Cake, Coffee Cake or Lemon Cake, others that are more elaborate in the mix and flavouring.
