With the rise in gluten intolerance, and altering tastes and fashions, there has been an expansion in the numbers of cakes using alternative grains. Gluten-free recipes are new, adapted and resurrected. These cakes have interesting textures and use flavouring in different ways to traditional flour-based cakes.
